Catfish filet dipped in seasoned cornmeal and baked until flaky.  Mashed sweet potatoes and collard greens, mustard greens, kale slow cooked with onions, garlic, seasonings and vegetable broth.

Seasoned boneless, skinless chicken breast seared and roasted with baby portabella mushrooms in a brandy cream sauce.  Served with steamed rice and fresh green beans.
